Shrimp Enchiladas with Creamy Poblano Sauce

My mom actually found this recipe for us to try a couple years ago. I loved it so much that I found the recipe and also made it for me and my husband. This was definitely a hoop he was not used to jumping through, I will explain more later.
The original recipe is from a blog called Little Spice Jar and it's been one of my favorite blogs to follow. She went a very different route with a traditional shrimp enchilada and it works! Maybe not for people who hate eating healthy like I used to be... But now that I am adulting more I love a good change.
I would love nothing more than to tell you how to make this but I'm not gonna do that. I left the link to the exact recipe from the original owner so that you could try it.
My family gave this 5 stars. This recipe did require some prep work with the poblano, Monterey cheese, cilantro, shrimp, and onion. My suggestion is do this the night before or morning of if you're a busy bee. This is not a hard recipe to do on a weeknight. Poblano is a very mild chili so kids could enjoy it, and since the carrots and spinach are inside the enchilada maybe hide the fact they were used until after the first bite? Unless your kids love carrots and spinach obviously. Also, the hoop my husband doesn't jump through, he has never made a sauce for enchiladas. He has always used something from a can or jar. He was hesitant but enjoyed the end result.
