This is a recipe I found on Pinterest. The concept intrigued me because I love eating jalapeno poppers. Jalapenos stuffed with cream cheese and cheese wrapped in bacon and cooked on the grill. This just has some chicken added to it.
This is my first time cooking a recipe from Eatwell 101 but I have 7 other recipes saved from them as well as this one. They showed a lot of pictures and did some step by step pics as well. They also add tips for the recipe. You can also see what other people thought about it and what they did differently for their families.
For this recipe, you will need chicken breast cooked and shredded, garlic powder, softened cream cheese, heavy cream, chicken stock, jalapeno peppers, shredded sharp cheddar cheese, paprika, and crumbled crispy bacon. Lay the chicken in a casserole dish and season with garlic powder, paprika, and some pepper. Whisk together cream cheese with heavy cream and chicken stock then spread it over the chicken. Cut jalapenos into slices then spread them out over cream cheese mixture. Sprinkle cheddar cheese on top. Cook at 375 degrees for 15 minutes. Take out and sprinkle bacon on top and put back into the oven for 5 more minutes.
This is a super easy recipe. Can easily be done in 30 minutes if you get all the prep work done before.
This can make 2 small casseroles in an 8x8 dish or 1 big one in a 9x13 baking dish.
This has gotten lots of great reviews from other families. My family only has 1 critique was that it was dry! We used leftover beer can chicken that had been in the freezer and we didn't really hydrate it when getting it thawed so I think that was the downfall. So if this ever happens again I would like to warm the chicken in with chicken stock and drain it before putting it into the dish.
How would you keep the chicken from getting dry?
