Mini Pineapple Upside Down Cake

Found this recipe on Pinterest through a blog called, One Little Project.


All you need is pineapple slices, salted butter, brown sugar, maraschino cherries, and yellow cake mix. You will also need some baking spray, a jumbo muffin pan, a small mixing bowl, and a cookie sheet.


This is such a cool and yummy recipe.


Melt the butter and mix with the brown sugar. Pour into each muffin section. Put 1 pineapple slice into each thing and half a cherry in the center. Make the cake mix with the ingredients needed but instead of water use the pineapple juice from the sliced pineapple can. Pour into each thing until full. Bake at 350 degrees for 20 to 25 minutes.


I had about 3 or 4 myself. My husband enjoyed them as well which I was surprised about because he doesn't usually enjoy this stuff.
